Moroccan Buckwheat Salad
Did you know that buckwheat is not a wheat (or even a grain!) at all? It has been eaten in Asian and Eastern European countries for centuries, and is a terrific energy source. Buckwheat is naturally gluten free, and in its whole grain, or groat, form has high levels of resistant starch resulting in a low GI response. Studies also show buckwheat is more satiating then other grains like wheat and rice and has prebiotic benefits. It is also a complete protein, containing all 9 of the essential amino acids that humans do not produce naturally and must consume through food. What more can you ask from this magical seed?!
I have been enamored with this buckwheat salad lately - it's got a nice little spicy kick to it and is so fresh and filling and nutritious! Perfect for these summer weekends when you don't want to be in the kitchen with a hot oven all day. And while I love it prepared as it is, it is so versatile, you can add whatever veg you have in your fridge.
